I thought that I'd share a family recipe. When my dad was little he didn't like apple pie because he didn't like chunks of apples in it. So one day my Grandpa Howard asked Grandma Jean if there was some way to make apple pie without the chunks in it. So Grandma came up with this recipe for my dad.
When Mom and Dad got married Dad wanted Mom to make him apple sauce pie. So Mom asked Grandma for the recipe, but was disappointed to find out that she had never written down the recipe. So Mom watched Grandma make it. Mom has made apple sauce pie for 40 years, but she has never written down the recipe either. (Even though many of us have asked her to.) She has always said that the recipe isn't exact and sometimes it works and sometimes it doesn't.
Well, when my mom was here for Thanksgiving I told her that we were going to make the pie and write it down. So we did and it was one of the best apple sauce pies we've ever made. So I thought that I would share it.

Grandma Jean's Apple Sauce Pie
1 48 oz jar of Cinnamon flavored Applesauce
2 cups water
1/2 cup corn starch
1 cup sugar
4 tsp lemon juice
2 prepared pie crusts
Pour entire jar of applesauce in a large pan. (You can use plain applesauce and then add cinnamon if you want.)
Pour water and corn starch into empty applesauce jar and shake until corn starch and water are mixed well. Add to apple sauce. Add sugar and lemon juice.
Bring mixture to a boil. Stirring often so that it doesn't burn to the bottom of the pan. As it boils the mixture will thicken and change color. Let the mixture boil until it can't be stirred down. When the mixture is thick, pour into pie crusts. It will make 2 pies. Bake at 375 until the pie crust is done. Let cool and then refrigerate until ready to eat.

Sounds yummy... so does it solidify them cuz if the cornstarch or does it run all over your plate?! It sounds delicious. Hmmm, when are we getting together next? Maybe that's what you should bring! haha
The cornstarch thickens it until it is solid. If it isn't boiled long enough it will be runny though.
oh my goodness... I am TOTALLY going to make this!! Chuck's fave pie is apple, but I hate the texture of baked apples. blech! I do like applesauce though, so this will be a good compromise between us. And from the looks of it, yummy too! you are awesome!
